Fried Artichoke Hearts

Yields: 4-6 servings         Prep Time:  10 min,      Cook Time: 15 min.

Ingredients:

  • 2 (14-ounce) cans whole large artichoke hearts
  • 1 cup all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 3 large eggs
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon chopped fresh Italian parsley
  • ¼ teaspoon granulated garlic
  • 2 cups vegetable oil, for frying
  • Marinara sauce (for serving, optional)

Instructions:

  1. Prepare the Artichokes:
    • Drain the liquid from the artichoke cans.
    • Cut each artichoke heart in half.
    • Gently pat the artichoke halves dry with paper towels.
  2. Prepare the Flour:
    • Place the all-purpose flour in a shallow dish.
    • Season the flour with salt and freshly ground black pepper, to taste.
  3. Prepare the Egg Wash:
    • In a separate bowl, whisk together the eggs, Parmesan cheese, chopped Italian parsley, granulated garlic, and salt and pepper, to taste.
  4. Fry the Artichokes:
    • Heat the vegetable oil in a large skillet or deep fryer to 350°F (175°C).
    • Dip each artichoke half first into the seasoned flour, and then into the egg wash, ensuring it is fully coated.
    • Carefully place the coated artichoke halves into the hot oil.
    • Fry for 2-3 minutes on each side, or until golden brown and crispy.
  5. Drain and Serve:
    • Remove the fried artichoke halves from the oil and place them on a plate lined with paper towels to drain excess oil.
    • Serve immediately with a side of marinara sauce, if desired.
    • Enjoy.
