Ingredients:
- 2 (14-ounce) cans whole large artichoke hearts
- 1 cup all-purpose flour
- Salt and freshly ground black pepper, to taste
- 3 large eggs
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon chopped fresh Italian parsley
- ¼ teaspoon granulated garlic
- 2 cups vegetable oil, for frying
- Marinara sauce (for serving, optional)
Instructions:
- Prepare the Artichokes:
- Drain the liquid from the artichoke cans.
- Cut each artichoke heart in half.
- Gently pat the artichoke halves dry with paper towels.
- Prepare the Flour:
- Place the all-purpose flour in a shallow dish.
- Season the flour with salt and freshly ground black pepper, to taste.
- Prepare the Egg Wash:
- In a separate bowl, whisk together the eggs, Parmesan cheese, chopped Italian parsley, granulated garlic, and salt and pepper, to taste.
- Fry the Artichokes:
- Heat the vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- Dip each artichoke half first into the seasoned flour, and then into the egg wash, ensuring it is fully coated.
- Carefully place the coated artichoke halves into the hot oil.
- Fry for 2-3 minutes on each side, or until golden brown and crispy.
- Drain and Serve:
- Remove the fried artichoke halves from the oil and place them on a plate lined with paper towels to drain excess oil.
- Serve immediately with a side of marinara sauce, if desired.
