NY Strip with Demi-Glace

Part 1: The Roasted Beef Stock

Ingredients:

 Meats: 2 lbs. chuck roast, 1 lb. beef marrow bones

• Aromatics: 1 large onion (rough cut), 1 whole garlic head (smashed), 2 large carrots (rough cut), 4 celery sticks (rough cut)

• Liquids: 5 quarts water, ½ cup Sherry wine, ¼ cup olive oil

• Pantry: 18 oz. tomato paste, 2 tbsp. peppercorns, 3 bay leaves, salt (to taste)


Instructions

1. Sear the Beef: Season the chuck roast and marrow bones generously with salt and pepper on all sides. In a large skillet over medium-high heat, add the olive oil. Sear the roast and bones for 5 minutes per side until deeply browned. Remove the meat and bones and set aside on a large roasting pan.

2. Sauté Aromatics: In the same skillet, add the onions, celery, carrots, and garlic. Deglaze the pan with the Sherry wine, then add the salt, peppercorns, and bay leaves.

3. Fortify with Tomato: Cook the vegetables until translucent and fragrant. Stir in the tomato paste and continue cooking for 3–4 minutes to caramelize the paste.

4. The High-Heat Roast: Spread the vegetable and tomato mixture over the meat and bones in the roasting pan. Place in a preheated 500°F/260C oven and roast for 30–40 minutes until the edges are dark and caramelized.

5. The Long Simmer: Transfer the roasted meat, bones, and vegetables into an 8-qt pot. Add 5 quarts of water and simmer for 3 hours.

6. Strain & Store: Strain the stock through a colander, discarding the solids. Reserve 16 oz. of the stock for the Demi-Glace; refrigerate or freeze the remaining broth for future use.


Part 2: The Final Demi-Glace

Ingredients:

• 16 oz. reserved beef stock

• 2 oz. heavy cream

• 2 tbsp. unsalted butter

• Salt to taste

Instructions:

1.  Reduce: In a skillet over medium-high heat, combine 16 oz of stock, heavy cream, and butter.

2. Thicken: Whisking occasionally, cook until the sauce reduces and thickens to a velvety consistency that coats the back of a spoon.

3. Serve: Prepare your favorite steaks to your desired temperature. Pour the warm Demi-Glace over the steaks and serve immediately.
