Chicken Milanese

Yields: 4-6 servings     Prep Time: 15 minutes   Cook Time: 20 minutes 


Ingredients: 

• 3 boneless-skinless chicken breasts 

• 4 large eggs 

• 1 dry cup all-purpose flour 

• 10 oz. Italian-style breadcrumbs

 • 1liquid cup olive oil (for frying)  

•  4 tbsp. grated Parmesan cheese 

• 2 tbsp. chopped Italian parsley 

• ½ tsp. granulated garlic 

• Salt & black pepper to taste 

•Serve with a side salad of your favorite pasta.


Instructions:


1. Butterfly each chicken breast and pound them until thin, ensuring not to tear the meat. 

2. Season both sides of the chicken breasts with salt and black pepper. 

3. Prepare the egg wash: In a large bowl, whisk the eggs together with the granulated garlic, 2 tbsp. of parmesan cheese, parsley, salt, and pepper to taste. 

4. Place the flour and breadcrumbs in two separate large, shallow pans. 

5. Begin the breading process: Dredge each chicken breast in the flour, then dip it in the egg wash, and finally coat it with the breadcrumbs. 

6. Heat oil to 325°F (163°C). Fry the chicken for 3-4 minutes per side, or until golden brown and crispy. Remove from the oil and drain on a paper towel-lined plate.
