Yields: 4-5 Servings Prep Time: 10 Minutes Cook Time: 15-30 minutes
Ingredients:
• 1 lb. uncooked spaghetti
• 4 lg. egg yolks
• ½ cup parmesan cheese – plus more for serving
• ¼ cup heavy cream
• ¼ - ½ tsp. black pepper
•1 cup of pasta water (2 minutes before pasta is ready)
Instructions:
- Begin to Cook Pasta: Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente.
- Cook the Pancetta: While the spaghetti is cooking, cook the meat in a large skillet over medium-high heat until crisp. Remove the meat from the skillet and drain on paper towels.
- Make the Sauce: In a large bowl, whisk together the egg yolks, parmesan cheese and black pepper.
- Combine: Add the heavy cream, then the drained hot pasta, reserved pasta water, and the egg mixture.
- Finish: Stir in the cooked pancetta and toss until the spaghetti is evenly coated.
- Serve Immediately: Top with addition parmesan.
