Italian Sautéed Mushrooms

Yields: 8-10 Servings 

Prep time: 15 minutes 

Cook time: 45 minutes 


Ingredients: 

  • 32 ounces of white mushrooms 
  • 1/2 cup of diced yellow onion 
  • 3 cloves of garlic (minced) 
  • 2 & 1/2 cups of tomato sauce 
  • 9 tbsp. of olive oil 
  • 4 tsp. of Parmesan cheese 
  • 1 Fresh basil leaf (torn) 
  • salt & pepper to taste 


Instructions: 

  1. Slice Mushrooms: Slice the mushrooms ¼ inch.
  2. Blanch Mushrooms: Blanch the sliced mushrooms in boiling water for 30 seconds. Drain immediately.
  3. Sauté Mushrooms: Heat 6 tablespoons of olive oil in a large skillet. Add the blanched mushrooms and cook over medium heat until all the moisture has evaporated.
  4. Sauté Onions and Garlic: In a separate skillet, heat 3 tablespoons of olive oil. Add the onions and cook for 3 minutes. Add garlic and continue cooking until the onions and garlic turn light golden brown.
  5. Combine: Pour the cooked onions and garlic into the skillet with the mushrooms. Season with salt and pepper to taste.
  6. Simmer with Sauce: Cook for 5 minutes. Add the tomato sauce, grated Parmesan cheese, and fresh basil leaves.
  7. Finish: Reduce heat and simmer for an additional 10 minutes. Serve immediately.
