Ingredients
For the Wings:

For the Chipotle Marinara Sauce:
- 28 oz. Plum tomatoes (hand-crushed; imported preferred)
- ¼ cup Olive oil
- 8 cloves Garlic (thinly sliced)
- 1+ Chipotle peppers in adobo (adjust to desired heat level)
- 1 tsp. Salt
- ½ tsp. Dried basil
- ¼ tsp. Ground black pepper
Instructions
1. Prepare and Roast the Wings
- Preheat your oven to 450°F (230°C).
- Season: In a large mixing bowl, combine the wings with salt, black pepper, onion powder, and garlic powder. Toss thoroughly until the wings are evenly seasoned.
- Arrange: Spread the wings in a single layer across a large sheet pan. Drizzle evenly with olive oil.
- Bake: Roast for 45 minutes, or until the skin is golden and crisp.
2. Prepare the Chipotle Marinara
- Infuse: In a large skillet over medium heat, combine the olive oil, sliced garlic, black pepper, and dried basil. Sauté until the garlic is fragrant and turns a light golden brown.
- Simmer: Add the hand-crushed plum tomatoes and salt. Reduce the heat to low and bring the sauce to a gentle simmer.
- Reduce: Cook for 15 minutes. Incorporate the chipotle peppers and continue to simmer for an additional 5 minutes to allow the flavors to meld.
3. The Final Glaze
- Coat: Remove the wings from the oven and transfer them to a clean, large bowl. Pour the prepared Chipotle Marinara over the wings and toss until every wing is generously coated.
- Finish: Return the coated wings to the sheet pan. Bake for a final 5 minutes to set the sauce and achieve a caramelized finish. Serve immediately.
