Creamy Pesto Pasta

Pesto Ingredients:

* 6 oz. of fresh basil leaves

* 2 cloves of garlic

* 2 TBSP of pine nuts

* 1/4 cup of Pecorino Romano cheese

* 1/2 cup of olive oil

* Pinch of salt & pinch of black pepper


Instructions:

1. Combine the basil leaves, garlic and pine nuts together and then blend for 1 minute. 

2. Add salt and pepper, then slow pour olive oil into blender while turned on.

3. Finally, add the Romano and blend for 2-3 seconds

Note: If you do not have the time to prepare your own Pesto, you can use your favorite store-bought brand.


Pesto Cream Sauce:

* 1 cup of pesto

* 1 pint of heavy cream

* 3 cloves of garlic (chopped)

* 3 TBSP of unsalted butter

* 1/4 cup of Sherry

* 2 TBSP of Romano cheese

* Salt & pepper to taste


Instructions:

1. Begin cooking 1 lb. of Pappardelle or you Fav pasta

2. In a large skillet, add the garlic and butter and cook garlic until translucent.

3. Add Sherry and cook out the alcohol for 30 seconds.

4. Add the heavy cream and let simmer for about 5 minutes.

5. Add the pesto and Romano and then turn off heat.

6. Finally, add the cooked pasta and stir until the pasta is evenly coated with the cream sauce.

7. Serve immediately and Enjoy!
