Shrimp Alfredo

Yields: 4-5 Servings      Prep time: 5 minutes      Cook time: 30 minutes


Ingredients: 

•1 lb. fettuccine

•1/2 lb. gulf shrimp  

•½ stick (5 tbsp.) unsalted butter 

• 1 & ½ pints heavy cream 

• •¾ cup quality Parmesan (grated)

•¼ tsp. salt • •pinch of white pepper 

 

Instructions: 

1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente. Drain the pasta and set aside. 

2. Make the Sauce: In a large skillet over medium-high heat, melt the butter. Add heavy cream, salt, and white pepper. Reduce heat to low and simmer, stirring continuously for 8-10 minutes. 

3. Season shrimp and begin to sear them.

4. Combine: Add the cooked & drained fettuccine to the cream sauce and cook for 2 minutes, tossing to coat evenly. 

5. Finish: Stir in ½ cup of Parmesan cheese and reserved pasta water. Remove from heat and continue stirring until the cheese and the sauce is well combined. 

6. Serve: Top with seared shrimp and serve immediately while still hot and top with more parmesan cheese.
