Ingredients
• 2 lbs. Cod fillets
• 5 cloves garlic, chopped
• 1/4 lb. (1 stick) unsalted butter, divided
• 3 lemons (2 juiced, 1 sliced into rounds)
• 1 cup dry white wine
• 3 tbsp fresh Italian parsley, chopped and divided
• Salt and black pepper, to taste
Instructions
1. Season the Fish: Pat the cod fillets dry with a paper towel. Season both sides of each fillet generously with salt and black pepper.
2. Sauté the Aromatics: In a large, oven-safe skillet over medium-high heat, add the minced garlic and 4 tablespoons of the butter. Sauté until the butter is melted and the garlic is fragrant (approximately 1 minute).
3. Sear and Deglaze: Place the cod fillets into the skillet. Immediately add the white wine, the juice of 2 lemons, 3 tbsp. butter and 2 tablespoons of the chopped parsley.
4. Simmer: Allow the liquid to simmer for about 5 minutes, letting the flavors meld with the fish.
5. Top for Broiling: Place a lemon slice and a thin sliver of the remaining butter on top of each piece of cod.
6. Broil: Set your oven broiler to High. Place the skillet on the middle oven rack and broil for 8–10 minutes, or until the fish is opaque and flakes easily with a fork.
7. Garnish and Serve: Remove from the oven, sprinkle with the remaining tablespoon of parsley, and serve immediately.
