Yields: 4 Servings Prep Time: 5 minutes Cook Time: 10 minutes
Ingredients
- 12 oz. green beans (fresh or frozen)
- 3 cloves garlic, thinly sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 3 Roma tomatoes, diced
- Salt and black pepper, to taste
Instructions
- Prepare the Beans: * If using fresh beans: Blanch (poach) them in a pot of boiling salted water for 3–4 minutes until tender-crisp, then drain.
- If using frozen beans: Thaw completely and pat dry to ensure they sauté properly in the pan.
- Sauté the Aromatics: In a large skillet over medium-high heat, combine the olive oil, butter, and sliced garlic. Sauté until the garlic is translucent and fragrant, being careful not to let it brown too quickly.
- Combine: Add the prepared green beans and the diced Roma tomatoes to the skillet. Season generously with salt and black pepper to taste.
- Finish and Serve: Sauté the mixture for approximately 5 minutes, tossing frequently so the beans are well-coated in the garlic butter and the tomatoes begin to soften slightly. Serve immediately while hot.
