Grandma’s Meatballs & Potatoes

INGREDIENTS

For the Roasted Potatoes:

  • 3 large Russet potatoes, peeled and diced into even cubes
  • 4 tbsp extra virgin olive oil
  • 3–4 cloves garlic, pureed or minced
  • 1/2 tbsp freshly grated Parmesan cheese
  • 3 sprigs fresh rosemary, Place on top whole sprigs
  • Salt and freshly cracked black pepper, to taste

For the Meatballs:

  • 1 lb (450g) ground beef
  • 1 lb (450g) ground pork
  • 6 slices white bread, crumbled into coarse crumbs
  • ½ cup milk
  • 2 large eggs
  • 3–4 cloves garlic, pureed
  • ½ cup freshly grated Parmesan cheese
  • ½ cup fresh Italian parsley, finely chopped
  • 2 tsp salt
  • ½ tsp freshly cracked black pepper

For Serving & Garnish:

  • Fresh Italian parsley, finely chopped
  • Extra grated Parmesan cheese

INSTRUCTIONS

  1. Preheat & Prep: Preheat your oven to 400°F (200°C).
  2. Season the Potatoes: In a large mixing bowl, combine the diced potatoes, extra virgin olive oil, melted butter, minced garlic, 2 tablespoons of grated Parmesan, chopped rosemary, crushed red pepper flakes, salt, and black pepper. Toss well until the potatoes are evenly coated.
  3. First Bake (Potatoes): Spread the seasoned potatoes in an even layer across a large rimmed baking sheet or baking dish. Place in the preheated oven and roast for 30 minutes.
  4. Mix the Meatballs: While the potatoes roast, prepare the meatball mixture. In a large mixing bowl, combine the ground beef, ground pork, crumbled white bread, milk, eggs, pureed garlic, ½ cup chopped parsley, ½ cup grated Parmesan, 2 teaspoons salt, and ½ teaspoon black pepper. Mix gently by hand until evenly combined (do not overwork the meat).
  5. Shape the Meatballs: Roll the mixture into 1.5 to 2-inch meatballs and set them aside on a plate.
  6. Combine Meatballs & Potatoes: After 30 minutes, remove the potatoes from the oven and stir them thoroughly. Place the meatballs directly on top of and between the potatoes.
  7. Final Bake: Return the tray to the oven and bake for an additional 45 minutes, or until the meatballs are cooked through and the potatoes are golden and tender.
  8. Serve: Remove from the oven, garnish with fresh parsley and extra grated Parmesan, and serve hot on a toasted hero roll or alongside a fresh green salad.
