GNOCCHI

Ingredients:

* 3 yellow potatoes

* 2 cups of 00 flour

* 1 egg

* salt


Directions:

1. Peel and boil potatoes for 20 minutes (add tsp. of salt to water).

2. Press potatoes in ricer and let cool down

3. On a flat surface, add flour, potato and egg 

4. Kneed for 5 minutes and then wrap in plastic wrap

5. After 20 minutes, divide into 4 pieces and roll out 10".

6. Cut each peace about an inch and run through floured Gnocchi board. 

7. Add salt to 6 quarts of boiling water, and then add Gnocchi.

8. Cook for about 4 minutes, drain and then add your favorite sauce.
